Perfect Pancakes with Fruit and Coconut Cream

A few weeks ago, we had a visitor from out of town, and of course I wanted to make impressive  food for our special guest.

For breakfast, I turned to an amazing vegan cook and used Isa Chandra Moskovitz’s Puffy Pillow Pancake recipe.  I’ve tried quite a few vegan pancake ideas and this one blows away any other I’ve tried.  It’s as good and probably better than any pancake I’ve had, either before or after going veg.  If you aren’t familiar with Isa’s books and website, you should definitely make time to check her out.  I am a big fan of her book, Veganomicon: The Ultimate Vegan Cookbook“ and there are tons of great recipes at her web site, the Post Punk Kitchen.

For the pancakes above, I used this recipe (I’ve done it probably 10 times before and it never fails!)

These are awesome, served just like “plain old pancakes”, with vegan butter and maple syrup, but I wanted to dress them up a little.  I added slices of fresh strawberries and banana between each pancake, topped with whipped coconut cream, and tossed a little powdered sugar on top after.

Simple, but really amazing, in my opinion!
